I've done it with asparagus (MY FAVORITE!!!), brocolli, brusselsprouts, calliflower and green beans--singly, though combinations would certainly be possible.

Take a cookie sheet (the jelly-roll kind with the low edges) and put in 1 to 2 TB of olive oil.

Cut brocolli and califlower into bite-sized florets. Half BIG sprouts, small ones can stay whole. Asparagus--just wash and break off the bottom.

Take your clean, prepped vegetables, and add them to the sheet in a single thin layer, shaking the sheet until the veggies have spread the oil out and been run through it lightly. SPrinkle with kosher or sea salt.


Turn on your oven's broiler. Put the pan under the broiler (not the top level rack, but one down) and keep an eye on them. Take them out and shake them as the top begins to lightly roast. DOn't let them burn, and let your eyes and nose tell you when they're ready.

Dead simple and delicious!
