I've been bakin' up a storm lately...Updated 7-28
I've tried this cake two different ways and both are really good.
Raspberry Lime (or Lemon) Cake
I did it a tiny bit different. I used Vanilla Silk Soy Yogurt in place of the sour cream/tofu. First time I did Raspberry Lime and used a 9x13 pan. Very yummy! Tonight, I made Raspberry Lemon. Instead of a sheet cake, I used a mini bundt pan (makes 4 minis) and the rest in an 8x8. It was delicious either way and very summery!
My kids were licking their plates clean it was so good! My hubby likes both, but prefers the Lemon version. Ok, so maybe this is a part brag post
And guess what...I have food porn!

Ok, so for my third installment of the cake, I tried Blueberry Lemon. It was good, but the raspberry lemon is my personal fav(and hubby's too). I think I might try it again though, I got a different brand of fresh blueberries than usual and I don't believe they were as good as the other brand. If I can get to a farmer's market to get some super fresh local that have great flavor, I think that might help. My mom did vote for the blueberry as her favorite though.
Next on my list...Pineapple Upsidedown Cake. I'm making it tommorrow morning to take to hubby's work for his birthday. Then for his real birthday cake, butter cake with a wonderful buttercream frosting.
There will be food porn, but as a warning...I can cook, but I doubt highly my decorating skills!

I think my pineapple upside-down cake is gonna go down in flames. Or at least bubble profusely over my pan. I might have to go pan hunting so I can make the birthday cake without the same fear

I'm actually shocked, it didn't bubble over. It even looked pretty and apparently tasted pretty darn good too
Hubby brought home the leftovers so I'm gonna try some in a bit. Good lord, today, I have to make brownies, cornbread and make icing to put together hubby's b-day cake.

This is the first I have had time to upload the latest food pics, so everyone, please ready your napkins!
First up, Shop's Pizza Rolls (homemade sauce not pictured)

I borrowed Pizza Hut's "idea" and made it much betta. I took the big and flaky Pilsbury crescent rolls and rolled them out a bit on a lightly floured surface. Add in favorite pizza toppings (in our case, red and green peppers, onions and turkey pepperoni. Meijer 6 cheese Italian Blend for the non-milk allergic in the house). Roll, baby, roll! Bake in oven at 350 (or temp on crescent roll pack) until throughly cooked, abou 20-25 minutes. Dip in favorite pizza sauce (I have a good and easy recipe if anyone wants, takes a lousy 5 minutes tops to put together). Rave reviews and easy pizza night fix.

We ate most of it before I realized I hadn't snapped a pic. Same thing as the little bundts, just with blueberries and lemon. Light and tasty. Used 3 cups blueberries.
Double Layer Butter Cake with Un-Veganed Buttercream Frosting

The cake was good, but a bit drier than I hoped for. I'm more of a moist cake type of girl though. Husband couldn't get enough. I used a vegan buttercream recipe but subbed real milk when called for. I have used the frosting recipe as vegan before and was pleased, but I couldn't get it to thicken up like I wanted. Tasted fine, but thin. I'm hunting for a new buttercream recipe now.

Same cake recipe as the butter cake above. I didn't get a good slice, but had a few yummy nibbles. Seriously good reviews on this one. The topping was just devine. But really, can you go wrong with butter, brown sugar and honey? I think not. Feel free to make fun on my aluminum foiled "cake platter." Donations toward a pretty cake plate will be accepted from the discontent or generous hearted.
Black Forest Brownie Bundts

Ok, I had huge plans for this for my food allergic kiddo. After slaving over a hot stove for two cakes, cornbread and a big ol' bowl of icing frustration, I had to scale down plans. I used a Cherrybrook Farm Choc Chip Brownie mix (Cherrybrook specializes in allergy friendly baking mixes, God Bless them!). I baked them up in bundt pans to look purdy and then threw on some Rice Cream and drizzled with marachino cherry juice and a little kiss of cherry goodness. The kids devoured them! I do have plans to do them in a true black forest style next time about. Just couldn't muster the energy this time.

How thin did you roll the pizza dough? Did you take it straight outta the can or take the whole tube and roll it out with a pin? I did a calzone with whole wheat flour a coupla weeks ago. I like the WW flour, it was only a tad more "hearty" than reg. bleach white AP flour.
One more question. Did you take the pic of the last piece of the BB/lemon after taking a bite out of it?

You can't afford me (shop flutters eyelids innocently) I'd love to do some kind of bakery thing, but I don't yet have the knowledge to take it that far. And I probably can't decorate worth a lick either (LOL) I am however playing with the idea of starting a food allergy cooking blog and featuring some of my non-allergan friendly baking as well.
I did not roll the crescents terribly thin, otherwise rolling it up after adding the toppings would have been a bitch. I just floured up my workspace and baby silpin roller and gave the crescents a bit more room to fit toppings on. Gotta make sure that you flour the pin and surface or the crescents will stick something fierce. I loved that the crescents give a nice balance to the "thickness" of the melted cheese. I tried the pizza roll things at Pizza Hut and they were so dang heavy with the heavy dough and super thick cheese.How thin did you roll the pizza dough? If I do pizza dough from "scratch" I used to use a certain box mix from the store that is no longer available. I need to find a good replacement and would love to try a WW version. If you want to share your crust recipe, I'd be happy to try it sometime.

Bman-you gotta try it. Not at all hard to make. I jacked up the blueberries to 3 cups, simply because I loooove blueberries.
Ok, I think I might know what my next adventure in baking is. Cherry Slab Pie. But I'm willing to take "requests" as well. I'm taking a short break from cakes and wanting to try something "new."
