It depends... my favorite cheese by itself is a sharp chaddar.... my fave with crackers is bucheron (technically a member of the broader 'chevre' cheeses... aka goat).... for a sandwich, provelone... for omlettes, havarti....

Stilton, Aged White Cheddar, Gruyere, Asiago, (process cheese) Horseradish Cheddar, a good mild cheddar, Provolone, American or Queso Blanco, Feta, Gouda, Butter Cheese (Hicory Farms used to get a seasonal butter cheese, magnificent!)

It would be easier to list the cheese that is my least favorite... not that I don't like it, just least among the others: Swiss cheese

swiss cheese to me is great on a sandwich... but it needs to be the baby variety, which I think has more flavor and less 'plastic' factor than it's larger bubbled counterpart... Swiss cheese is actually very good melted...

I'm with OA. Cheesecake.

I'm not very adventerous with cheese, I dislike very strong cheeses. So I stick more with cheddars for most stuff. Colby Jack for burgers. Provelone for warm sandwiches. Cold sammies usually have white american (Subway).

I picked up a block of Brie streaked with a Blue at Kroger awhile back. It was so addictive that i went back and bought 3 more blocks.

I like cheese in general.

Aged cheddar, Stilton, Jalapeno Havarti, Spiced Gouda, Gouda, Edam, Smoked Gouda, Gruyere, Fruliano, fresh Mozzarella, Brie, Brie with cranberries, sheep's milk cheese, I like cheeses that are made from raw milk too.
